			<content:encoded><![CDATA[<p>Some exciting new items were show at our monthly sales meeting today.  The first product was Veal Top Round from Marcho, 2-5pounders to the case. Great color, flavor and structure!  If you like slicing your own veal then definitely ask your sales rep about this product.  The second item was a sliced and pounded Veal Scaloppini.  This Veal Scaloppini comes in frozen and has great color and flavor.   I made Veal Marsala today for the sales team and they loved it!    The third product is for all your holiday parties from Farmland Steamship of Ham, perfect with a Orange Bourbon Glaze; bone in ham that has a handle for carving. Make a great impression with your customers with this great carving station item. The last product was Brethren Butter, this butter is a 2 pound package that is hand rolled and packaged.  Take the opportunity to look at this new butter with an average butter fat content around 86%.</p>
<p>Another part of the sales meeting was an update our equipment line. Chef Bill just  purchased 2 Bakers Pride ranges and a Beverage Air refrigerator.  Our large equipment line at Ettline has really taken off.  We have the ability to get you anything from a ladle to your entire kitchen from booths to tables, chairs and plateware, as well as ranges and pizza ovens to toaster.  With a list of manufactures that is simply amazing.  Please contact  your Ettline sales rep for more information or just blog me here and I can come out and help you.</p>

<p>Preparaton:</p>
<p>Mix flour and seasonings together in a bowl.<br />
Place butter milk in another bowl.<br />
Mi Panko and cracker meal in another bowl.<br />
Bread chicken breast tender clips with standard breading procedure<br />
Deep fry till internal temperature reaches 165 degrees.<br />
Serve with Sweet Baby Rays BBQ sauce.</p>

<p>Steam rice.<br />
Place sesame oil in pan and allow to get hot.   Place chicken tenders in hot oil and sauté till 165 degrees.   Toss Vegetables in with chicken and sauté until hot.   Toss with Teriyaki sauce and serve on top of rice.</p>

<p><strong>Italian Scallops</strong><br />
Suggested Sell per Plate:  $9.95</p>
<p><strong>Italian Scallops Recipe:</strong><br />
48104	3 each 10/20 dry scallops<br />
49277	2 each plum tomatoes<br />
88215	2oz chopped shallots<br />
38811	1oz chopped garlic<br />
49107	.25 oz Thyme<br />
45021	.25 cup pesto sauce<br />
16075	.25oz butter<br />
27249	2oz Extra Virgin Olive Oil<br />
Kosher salt and Black pepper to taste</p>
<p>Preparation:</p>
<ul>
<li>Cut roma tomatoes in half and season with EVOO, salt, pepper, garlic, shallots and thyme</li>
<li>Roast in oven at 450 degrees until almost dried.</li>
<li>Pull tomatoes and allow to cool then dice being sure to save all liquids, taste and season with salt and pepper as needed.</li>
<li>Place pesto sauce in pan and bring up to temp, turn off flame and whisk in butter.</li>
<li>Place EVOO in a sauté pan and allow to become hot</li>
<li>Season scallops with Salt and Pepper and then sear in hot sauté pan.</li>
<li>Place a spoonful of pesto sauce on bottom of plate.</li>
<li>Arrange Scallops on plate and top with chopped roma tomatoes.</li>
